Some can, sold seller-fulfilled rather than through the fulfilment network, and that is usually the only version worth doing. You keep control of ship days, cold packing and the transit limits that stop an order going to a zone it cannot reach safely — which is exactly the control you lose by handing stock to a warehouse. Shelf-stable items from the same catalogue can go in the fulfilment network normally. The split is per SKU, and it is decided by shelf life and packaging, not by brand.

Faire is a discovery channel for exactly that trade, and for a lot of Philadelphia makers it is a better first marketplace than Amazon. The reporting never reconciles with your Shopify numbers, the failure modes are suppression and buy-box loss rather than creative fatigue, and nothing means anything until the unit economics are modelled after fees.
